For Pizza Dough
7 grams of yeast, 1 teaspoon of brown sugar, 8 fl oz warm water, 200 grams of buckwheat flour, 200 grams of white flour, 1 teaspoon of olive oil, 1 pinch of salt
For Tomato Sauce
½ finely chopped red onion, 1 clove of grated garlic, 1 teaspoon of olive oil, 1 teaspoon of dried thyme, 400 grams of chopped tomatoes, 5 grams of basil leaves, 1 pinch of salt

Mix yeast, sugar and warm water and wait 15 minutes. Then add all the base ingredients and ferment the dough for 45 minutes.
